I am a baker and pastry chef, I’ve worked at notable restaurants such as, The Brewster Inn of New York, and I love finding new recipes to make. Lately I’ve zeroed in on what makes the best egg bread recipe, the best. Here’s what I found.
The way I had done this is by adding the various ingredients, such as the Toasted Coconut and the Pina Colada flavoring to the batter as I was making the dough.
To make the Pina Colada flavoring I used:
- Captain Morgan rum
- Peach Schnapps
- Peach Vodka
- Sparking Pina Colada juice (non-alcoholic).
Otherwise its just like that generic Callahan Bread you get in the beginning of meals in diners.
Once I had the dough formed, I went back to the original recipe and followed the next steps.
- I let the bread rise
- Shaped it
- Let it rise a second time
- Then baked it on 350, for 20-30 minutes.
Once it was baked, I then let it cool. While I was letting it cool, I made the Pina Colada Icing; which consisted of:
- Powdered Sugar
- Peach Schnapps
- A splash of moonshine
- More of the Pina Colada juice
- And a base of coconut milk (something I would not have thought worked well in icing).
I then put the icing on the bread and let it sit.
Hours later, I had wrapped the bread up keeping it moist.
The icing was the perfect touch on the sweet Egg Bread to make it my own unique flavoring of Pina Colada!
I cannot wait to make it again. Also as a side note, It freezes well if you have freezer bags!
